Season your grates with canola oil

Just like a cast-iron skillet, grill grates need to be "seasoned" to protect them from rust and keep food from sticking. After cleaning, dip a folded paper towel in canola oil, hold it with long tongs, and wipe a thin, even layer across the warm grates. Canola oil polymerizes under heat, creating a hard, protective barrier against moisture. Do this after every deep clean and right before you grill.

Burn off the residue (the 15-minute rule)

Never leave fresh food residue sitting on the grates after cooking, as it traps moisture and causes corrosion. When you're done cooking, turn the heat up to high for 10 to 15 minutes to turn any leftover food and grease into ash. This makes brushing the grates incredibly easy and prevents mold from growing inside the grill between uses.

Avoid using cheap wire brushes

Old, cheap wire grill brushes can shed metal bristles, which can end up in your food. Invest in a high-quality brush with sturdy bristles or consider alternatives like bristle-free scrapers or nylon brushes to keep your grill clean and safe.
